We caught up with Tori from The Cheshire Dining Experience to discuss how to curate a spring menu that feels as fresh and unforgettable as the season itself.
How do you create a menu that is perfectly tailored to each couple?
When designing a wedding breakfast menu, we always start with a conversation with the couple. We like to understand their tastes, favourite foods, any cultural influences, and the overall feel they want for their day. From there, we look at the season, the venue, and how the menu will flow as part of the wider celebration. We’ll usually suggest a few ideas based on seasonal ingredients and our experience of what works well for weddings, then refine the menu together so it feels personal and reflective of the couple.
As we move away from the heavy comfort foods of winter, what is the one quintessential spring ingredient that defines your menus?
One ingredient that really defines spring for us is asparagus. It’s fresh, vibrant and incredibly versatile. We love pairing it with light, seasonal elements like lemon, pea, or fresh herbs, and it always feels like a real celebration of the season when it appears on the menu.
How do you balance the ‘lightness’ people expect in spring with the need for a wedding breakfast to feel like a substantial, celebratory feast?
It’s all about layering flavours and textures. Spring dishes can still feel generous and satisfying by using high-quality ingredients, thoughtful accompaniments, and well-balanced courses. For example, a lighter starter might be followed by a beautifully cooked main with seasonal vegetables and rich sauces that still feel celebratory without being overly heavy.
Are there specific local suppliers you’re working with for this year’s spring wedding season?
We always try to work with trusted local suppliers wherever possible. Seasonal produce from local growers and butchers plays a big part in our menus, as it allows us to keep everything fresh, sustainable, and reflective of the region.
What’s an example of an ‘unexpected’ spring pairing you’ve created that surprised and delighted wedding guests?
A pairing that has gone down really well with guests is strawberry with black pepper and basil. It sounds unusual at first, but the pepper enhances the sweetness of the strawberries while the basil adds a fresh, aromatic note – it’s simple but very memorable.
Spring is such a visual season. How do you incorporate the ‘aesthetic’ of the season into your dishes?
Presentation plays a big role. Spring naturally brings beautiful colours through ingredients like herbs, peas, radishes and edible flowers. We like to let those natural colours shine on the plate and keep the presentation elegant and fresh so that the dishes reflect the season without feeling overly styled.
What are we drinking this spring?
Light, crisp wines work beautifully in spring – things like Sauvignon Blanc, Pinot Grigio or a light rosé. Botanical-style cocktails are also very popular, particularly those featuring ingredients like elderflower, citrus, or fresh herbs which complement lighter seasonal dishes.
What trends are you seeing in wedding dining at the moment?
We’re seeing more couples move toward relaxed and interactive styles of dining. While the traditional three-course wedding breakfast is still popular, sharing platters, grazing tables, and family-style service are becoming more common as couples look to create a more sociable dining experience for their guests.
With more guests requesting plant-based or gluten-free options, how are you making these dishes feel like a ‘star’ of the show rather than an afterthought?
We approach these dishes with the same creativity and attention to detail as every other plate. Instead of simply removing ingredients, we design the dish around what works best, using seasonal vegetables, bold flavours, and thoughtful presentation so that every guest feels they’re enjoying something special.
